Last night I made taco pot pie. It's a very easy recipe to make, and it usually only lasts a day around my house. It's delicious!
1 store bought or homemade pie shell, top & bottom.
1 lb taco meat (try beef, chicken, or sausage..)
1 can corn
1 package frozen bell pepper stir fry
1 cup grated cheese
1 cup salsa
Preheat the oven according to your pie shell instructions. Cook the taco meat, and drain. Add the bell peppers, corn, and salsa. Cook until all the liquid is gone. Sprinkle half cup of the cheese on the bottom of the pie shell, pour in the meat mixture, sprinkle the remaining cheese on top. Add the top shell, crimping the edges. Make sure to cut slits in the top crust for steam to escape. Bake for half an hour our until the crust is light brown.
Let it rest about 10 minutes before serving. Garnish with salsa, cheese, guacamole, sour cream.. And enjoy! And yes, the photo is from my own pie last night.
