Big Wheel Cookies

This recipe is a classic I got from my Grandmother. She used to make these cookies for me all the time when I was a kid. There were many times when these were a real life safer!

Big Wheel Cookies
4 cups Flour
2 tsp Baking Powder
½ tsp Baking Soda
½ tsp Salt
¾ cup Plain Malted Milk Powder
1 cup Oleo
2 cups Brown Sugar
2 Eggs
1/3 cup Sour Cream
2 tsp Vanilla
1 cup chopped Walnuts (if preffered – I leave them out)

Sift all the dry ingrediants together in a large bowl. In another bowl, cream the oleo, and add 2 cups brown sugar. Add the eggs, beating well till everything is incorporated. Add ½ the dry ingrediants, mix well. Add 1/3 cup sour cream, 2 tsp vanilla. Mix this all together, then add the remaining dry ingredients.

Add a cup of nuts if desired (I don’t)

Chill 4 hrs.

Roll half of the dough out on well floured surface till ¼ inch thick. Cut into 5 inch circles with coffee can lid or whatever else ya have.

Bake @ 375 degrees on greased sheets until light brown. Cool the cookies for 2 minutes on the sheet, then carefully remove them to a cooling rack and cool completely. Once cooled, frost them up!

Frosting
¼ cup oleo, ¼ cup undilluted evaoprated milk, ad half cup brown sugar. Heat in a small pot.  Stir till sugar is disolved. Remove from heat, add 1/3 cup malted milk powder, ½ tsp vanilla, 2 ½ - 3 cups powdered sugar, till spreadable.

Decorate with 5 almond slices in a flower design, with a chocolate hersheys in the middle!
Makes about 18 cookies.

No Bake Chocolate Oatmeal Cookies

No Bake Chocolate Oatmeal Cookies


 These have long been a favourite of mine, ever since I was a kid. Easy and quick to make up, and they disappear almost as fast!

Ingredients: 

2 cups sugar
1 stick butter (1/2 cup)
1/2 cup Pet (evaporated) milk
1 teaspoon vanilla
2 1/2 tablespoons cocoa
1/2 cup peanut butter
3 cups oats

In a medium saucepan, combine all ingredients except peanut butter and oats and cook over medium heat.
Let boil for 5 minutes, stirring constantly.

Remove from heat and stir in peanut butter and oats.

Spoon out quickly onto wax paper or aluminum foil.

Cookies will harden as they set.


Plum Buckle


Ok, so the plum bread is a HUGE success. Wonderful recipe, highly recommend it. But, it didn’t TOUCH the amount of plums we had, so I decided to try this recipe as well. I didn’t double it this time.. but basically it makes like a plum upside-down cake. Delicious!


Ingredients
  • 7 cups pitted and quartered plums
  • 2/3 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 3 cups sifted all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 teaspoons vanilla extract

Topping:
  • 1 cup white sugar
  • 1/2 cup butter, softened
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
Directions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  2. Place the plums into the bottom of the prepared baking dish. In a large bowl, mash together 2/3 cup butter with 1 1/2 cup of white sugar until the mixture is smooth and creamy. Beat in eggs, one at a time. Stir in 3 cups of flour, the baking powder, and salt. Mix in the milk and vanilla extract to make a smooth batter. Pour the batter over the plums. Mix 1 cup of sugar, 1/2 cup of butter, 1/4 cup of flour, and cinnamon together in a bowl to make a crumbly topping; spread over the batter.
  3. Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 45 to 50 minutes.

Plum Bread


I was fortunate enough to be gifted with a metric ton of plums from Feithline's Mom. They are SCRUMPTIOUS plums.. very nice eating. However, we got a LOT of them, so had to do something besides simply eat them one at a time. SO I went searching fro recipes, and found this one. Just made the loaves.. I made a double batch of the batter, and poured them into 6 mini loaf pans. Of course, watch your bake time when using smaller pans.

Cook Time: 1 Hour
Ready In: 1 Hour 15 Minutes
Servings: 12
"Plums and walnuts are the key ingredients in this wonderful quick bread."

Ingredients:
1 egg
1/2 cup honey
2/3 cup white sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1 cup chopped canned plums
1 cup chopped walnuts
Directions:
1.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2.
In a large bowl, blend the egg, honey, sugar, and vanilla. Mix in the flour, baking soda, cloves, and cinnamon. Fold in the plums and walnuts.
3.
Transfer the batter to the prepared loaf pan, and bake 50 to 60 minutes in the preheated oven, until a toothpick inserted in the center of the loaf comes out clean.

Taco Pot Pie!


Last night I made taco pot pie. It's a very easy recipe to make, and it usually only lasts a day around my house. It's delicious!


1 store bought or homemade pie shell, top & bottom.
1 lb taco meat (try beef, chicken, or sausage..)
1 can corn
1 package frozen bell pepper stir fry
1 cup grated cheese
1 cup salsa

Preheat the oven according to your pie shell instructions. Cook the taco meat, and drain. Add the bell peppers, corn, and salsa. Cook until all the liquid is gone. Sprinkle half cup of the cheese on the bottom of the pie shell, pour in the meat mixture, sprinkle the remaining cheese on top. Add the top shell, crimping the edges. Make sure to cut slits in the top crust for steam to escape. Bake for half an hour our until the crust is light brown.

Let it rest about 10 minutes before serving. Garnish with salsa, cheese, guacamole, sour cream.. And enjoy! And yes, the photo is from my own pie last night.
